Rustic tomato soup

This tomato soup a very simple version - all ingredients go into the saucepan together and cook for 45 minutes. That's it. The soup is thick & smooth so any leftover is perfect for other recipes requiring a tomato sauce. It's also super-healthy, full of vitamins and low in calories. Also, unlike canned tomato soup, it has no sugar.

Ingredients
  

  • 1 kg of ripe tomatoes
  • 1 large carrot
  • 1 red onion
  • 3 stalks of celery
  • 1 clove of garlic
  • 2 bay leaves
  • 1 Tbsp cold-pressed olive oil
  • Salt and pepper

Method
 

  1. Roughly chop the vegetables and put them in a large saucepan. Add the oil and bay leaves, then season.
  2. Bring to the boil, then cover and simmer on a low heat for about 45-60 minutes. Stir occasionally, but don't add water, as the tomatoes will have enough liquid!
  3. When all vegetables are soft, remove the pan from the heat. Blend with a hand blender or in a liquidizer until smooth.
  4. Press the soup through a sieve if you'd prefer it silky smooth.
