Sausage, lentil and spinach salad

This sausage, lentil and spinach salad is a super easy dish, particularly if you have leftover grilled, fried or barbecues sausages.  So it’s ideal for lazy weekend meals or midweek suppers. Serve it with  fresh, crusty bread rolls (or brown rice).

Ingredients
  

  • 1 red onion
  • 1 garlic clove
  • 1 celery stick
  • 1 Tbsp olive oil
  • ½ tsp dried oregano
  • 1 Tbsp Dijon mustard
  • 1 tsp stock powder
  • 1 small glass of water
  • 1 tin green lentils drained
  • 2 handful baby spinach
  • 1 tsp cider vinegar
  • 4 grilled/fried sausages
  • Salt and pepper

Method
 

  1. Thinly slice the onion and finely chop the garlic and celery.
  2. Heat the oil in frying pan, then gently sauté the onion and celery over low heat for 8 minutes.
  3. Add the garlic and oregano and stir for a minute. Stir in mustard, water and stock powder.
  4. Add the spinach and cover with a lid.
  5. Cook for 5 minutes or until the spinach has wilted.
  6. Add the lentils and vinegar. Season to taste.
  7. Heat through, then serve.
