sautéed courgette with thyme

If you're after a super-easy side dish this sautéed courgette with thyme and lemon is worth a try. It's zingy, easy to make, and can be eaten cold too - so you can prepare it in advance for a party, or take it with you in your lunchbox or to a picnic. It goes really well with barbecued meat or fish and makes an excellent filler in burger or kebab.

Ingredients
  

  • 2 medium courgettes zucchini
  • 3 Tbsp olive oil
  • Juice of 1 lemon
  • 2 cloves garlic chopped finely
  • 1 handful of thyme
  • Salt pepper, thyme to garnish

Method
 

  1. Cut off the ends of the courgettes then, using a vegetable peeler, shave in into long ribbons.
  2. Heat some oil in a frying pan, add the garlic and thyme and cook for one minute. Add the lemon juice and the courgette strips. Sautee for about 3- 5 minutes under cover. It's ready when the lemon juice is absorbed.
  3. Season to taste and sprinkle with fresh thyme before serving.
