Sautéed green beans and peas

These sautéed green beans and peas go really well with roast lamb or grilled lamb chops. It takes only a few minutes to make this side dish - ideal for a traditional Sunday lunch or midweek supper.

Ingredients
  

  • 2 Tbsp butter or dairy-free margarine
  • 1 shallot onion minced
  • 1 tsp white wine vinegar
  • ½ tsp cane sugar
  • 300 g green beans
  • 300 g green peas
  • 4-5 sprigs of mint
  • Mint leaves to garnish
  • Salt and pepper

Method
 

  1. Heat the butter in a deep frying pan and soften the shallot for a couple of minutes.
  2. Add the vinegar and sugar, then the vegetables and the mint. Add 4 Tbsps of water.
  3. Bring to the boil, then cover and simmer for about 5 minutes, until the vegetables are tender.
  4. Discard the mint sprigs.
  5. Season to taste with salt and pepper, and sprinkle with fresh mint leaves.
