Sauteed potatoes with chorizo

This sautéed potatoes with chorizo is a popular tapas dish. It’s very easy to make, particularly if you use  pre-cooked or leftover boiled potatoes.  It’s perfect for brunch, lunch or light supper, served with a crispy salad – or fits in a tapas menu at a dinner party.

Ingredients
  

  • 300 g waxy potatoes
  • 2 Tbsp olive oil
  • 1 onion sliced
  • 2 cloves of garlic
  • 2 springs of thyme leaves only
  • 150 g cooking chorizo
  • 1 Tbsp chopped Parsley leaves chopped

Method
 

  1. Cut the potatoes in half and cook them in lightly salted water for 20 minutes, until tender. Drain then cool them, then cut them into about 1 cm slices.
  2. Thinly slice the onion & chorizo, then chop the garlic.
  3. Heat the oil in a frying pan. Fry the onion, garlic and thyme in hot oil until soft. Add the potato slices and fry them until golden. Transfer them to a plate.
  4. Fry the chorizo, until golden and has released its fat. Return the potato mixture to the frying pan and combine with the chorizo fat.
  5. Add the parsley and serve.
