Rinse and rub the potatoes, then cook them in lightly salted water until tender. Drain & cool then cut them into 1 cm thick slices.
Put aside a few coriander leaves, then blend the rest with one of the minced garlic cloves, lemon juice, water, sugar and cumin powder. Drizzle 5 tablespoons of oil continuously whilst pulsing. Season to taste - if necessary, add more lemon juice, oil, etc.
Heat the remaining 3 tablespoons of oil in a frying pan and cook the potato slices until golden, turn them over, add the remaining garlic, paprika and fry for 1-2 minutes until golden.
Transfer the sautéed potatoes in a serving dish. Season with salt and pepper, then drizzle with the coriander sauce and crumble some feta on top.
