Sautéed potatoes with feta and coriander sauce

This sautéed potatoes with feta and coriander sauce is a perfect side dish for occasions when you have guests around. The preparation, and half of the cooking, can be done in advance - only the sautéing needs to be finished just before serving. It goes really well with roast/grilled lamb or chicken.

Ingredients
  

  • 750 g new potatoes
  • 1 bunch coriander
  • 3 cloves garlic pressed
  • ¼ tsp of ground cumin
  • Juice of half a lemon
  • 2 Tbsp water
  • 2 pinches of unrefined sugar
  • 120 ml 8 Tbsp olive oil
  • ½ tsp paprika
  • 150 g feta cheese
  • salt and pepper

Method
 

  1. Rinse and rub the potatoes, then cook them in lightly salted water until tender. Drain & cool then cut them into 1 cm thick slices.
  2. Put aside a few coriander leaves, then blend the rest with one of the minced garlic cloves, lemon juice, water, sugar and cumin powder. Drizzle 5 tablespoons of oil continuously whilst pulsing. Season to taste - if necessary, add more lemon juice, oil, etc.
  3. Heat the remaining 3 tablespoons of oil in a frying pan and cook the potato slices until golden, turn them over, add the remaining garlic, paprika and fry for 1-2 minutes until golden.
  4. Transfer the sautéed potatoes in a serving dish. Season with salt and pepper, then drizzle with the coriander sauce and crumble some feta on top.
