Sauteed sweet potatoes and cabbage with fried eggs

Sweet potatoes are more healthy than potatoes so they are ideal for most diets and health-conscious meals. If you want something different, easy and yummy for breakfast, try these sautéed sweet potatoes and cabbage with fried eggs. You can add a pinch of chilli flakes to sautéed vegetables if liked.

Ingredients
  

  • 150 g sweet potatoes
  • ½ head savoy cabbage
  • ½ Tbsp Kikkoman soy sauce reduced salt content
  • 1 small head of red onion
  • 1 teaspoon olive oil
  • 2 eggs

Method
 

  1. Peel the sweet potatoes, then chop them into bite-sized cubes. Cook in hot, lightly salted water until soft (for about 8 minutes).
  2. In the meantime, chop the onion, wash the cabbage and thinly slice it.
  3. Using a slotted spoon, remove the boiled sweet potato pieces, then cook the cabbage in the same water for 2-3 minutes and drain.
  4. Heat the olive oil in a pan, soften the onions for about 5 minutes, then add the sweet potato and cabbage pieces together with the soy sauce. Stir-fry for a couple of minutes, then form 2 small wells in the middle. Open the egg shells and carefully slide the eggs into the wells.
  5. Saute, under cover, for about 8-10 minutes, depending on how runny you like your egg yolk.
  6. Season with salt and pepper, then serve.
