Sautéed sweet potatoes with spinach

This sautéed sweet potatoes with spinach is very healthy and rather easy to make. You can serve it as a side dish with grilled meat/fish or a as main course in a vegan, vegetarian or health- conscious diet. If you want it a bit more spicy add a chilli or use hot curry powder.

Ingredients
  

  • 2 Tbsp olive oil
  • 4 sweet potatoes 500g
  • 2 tsp curry powder see tips
  • ½ tsp sweet paprika
  • 1 red onion
  • 1 large clove of garlic
  • 100 g baby spinach
  • Coarse salt and ground pepper
  • Lemon or lime juice

Method
 

  1. Cut the sweet potatoes into cubes, then finely slice the onion & garlic.
  2. Heat 1 Tbsp olive oil in a large frying pan over medium heat. Cook the sweet potatoes, stirring, until tender for about 10 minutes. Transfer to a plate.
  3. Heat the remaining oil. Gently sauté the onion and garlic. Put the sweet potatoes back and add the curry powder. Cook for 1 minute, then add ½ cup of water. Cook, until the water evaporates and potatoes start to brown (for about 10 minutes).
  4. Add the spinach and cook, under cover, for 2 minutes until it wilts. Season with salt and ground pepper.
  5. Serve with some lemon or lime juice squeezed over it.
