Scallops in dill and wine sauce

These scallops in dill and wine sauce is a super easy dish, ready in just 5 minutes. It’s delicate and yummy, perfect as a tapa, antipasti or party nibbles. Alternatively, you could serve it on crostini, toast, blini or with freshly cooked pasta.

Ingredients
  

  • 1 knob butter or margarine
  • 1 clove of garlic sliced (optional)
  • 200 g raw scallops
  • Pinch of cayenne optional
  • 50 ml white wine
  • 2 Tbsp chopped dill
  • Salt and pepper

Method
 

  1. Heat the butter in a shallow, non-stick pan and fry the garlic for a few seconds over a medium heat. Make sure it doesn’t burn!
  2. Add the scallops, one by-one. When you’ve finished, turn them over, again one-by-one using a spoon. Then pour over the wine, add the chilli if used. Let it bubble and reduce the jus by half. Please Scallops must not be over-cooked!
  3. Season to taste and stir in the dill.
  4. Serve warm.
