Semolina halwa

Semolina halwa is a simple sweet dish prepared often in Indian homes for festivals and celebrations. This dish is fairly uncomplicated to make and is delicious.

Ingredients
  

  • 1 cup semolina
  • ¾ cup sugar
  • ¼ cup clarified butter
  • 4 green cardamoms powdered
  • 10 cashews
  • 1 Tbsp. raisins
  • 1 ½ cup water
  • 1 pinch edible camphor optional
  • 1 pinch edible orange color

Method
 

  1. Place a deep bottomed pan on low flame.
  2. Add clarified butter to the pan. Heat the butter for 1 min.
  3. Add the semolina to the clarified butter. Keep stirring till it turns slightly brown.
  4. Once it turns brown, add sugar, powdered cardamom, a pinch of edible orange color and water.
  5. Semolina will begin to absorb water, keep stirring to avoid lumps and until the whole mixture starts thickening and starts to leave the edge of the pan.
  6. Remove from the flame and set it aside.
  7. Take a small pan and add little clarified butter. Heat the butter for 1 min.
  8. Add cashew and raisins and fry till the cashews turn brown. Add to semolina mixture.
  9. Serve at room temperature or cold.
