Shiitake and red pepper stir-fry

This yummy Shitake and red pepper stir-fry can be served on a piece of toast or with noodles as a main vegan meal, or as  a side dish (for example with grilled steak or fish). It’s ready within 15 minutes, so it’s ideal on busy/lazy days.

Ingredients
  

  • 1 Tbsp vegetable oil
  • 4 spring onions
  • 2 cloves of garlic
  • 1 tsp chilli flakes
  • 125 g shiitake
  • 1 red pepper
  • 1 Tbsp Kikkoman soy sauce
  • 1 tsp sesame oil
  • 1 tsp sesame seeds
  • 2 Tbsp chopped coriander leaves
  • Lime juice
  • Ground pepper

Method
 

  1. Finely slice the spring onions and garlic. Cut the mushrooms into chunks and the bell pepper into thin slices.
  2. Heat the oil in a wok over medium-high heat. When it’s hot, add the spring onion and stir-fry for 3 minutes, then add the garlic and chilli flakes and stir for another 30 seconds.
  3. Add the mushroom and red pepper, stir fry for a minute or so, then add the soy sauce, sesame oil & seeds. Add some lime juice too. Turn down the heat and sauté for 3-5 minutes, until the mushrooms and red pepper are tender.
  4. Scatter the coriander leaves on top, season with plenty of ground pepper and squeeze some lime juice over it, then serve.
