Simple tomato soup

A warm soup is just what one needs on a wintery day. This simple tomato soup is a great hit with the kids.  You just need ripe tomatoes and  can slip in as many veggies you want. This is an easy and great way to get kids eat more veggies!

Ingredients
  

  • 500 g Ripened tomatoes Roughly chopped
  • 500 g Plum tomatoes
  • 1 litre Organic vegetable or chicken stock
  • 1 Onion Rougly chopped
  • 1 Carrot Rougly chopped
  • 1 Celery stick Rougly chopped
  • 1 Garlic pod
  • 1 tsp Olive oil
  • Salt as required
  • Pepper as required

Method
 

  1. Heat oil in a pan, add the onion, carrot, celery and the garlic and add 100 ml of the stock and cook the vegetables until soft. Set them aside to cool.
  2. Add the ripened tomatoes and plum tomatoes to the stock and cook the tomatoes in the stock.
  3. Once the tomatoes are cooked, remove them from the stock and set aside to cool.
  4. Once all the ingredients are cooled, blend together the cooked veggies and tomatoes and add this blended paste to the stock and boil.
  5. Serve hot with croutons, salt and pepper.
