Sirloin steak with port sauce

This sirloin steak with port sauce is a super-easy recipe, yet the result is perfect for dinner parties and special occasions. It's important that you use good quality, matured sirloin steak! Serve it with salad and mashed vegetables.

Ingredients
  

  • 1 large thick sirloin steak (matured)
  • 3 Tbsp red port
  • 150 ml vegetable stock
  • 2 spring onions
  • 2 tsp corn flour or corn starch
  • 1 tsp Dijon or English mustard

Method
 

  1. Wipe the meat dry before cooking.
  2. Chop the spring onions.
  3. In a saucepan heat the stock, add the port, mustard and cornflour/starch. Add the spring onion. While stirring constantly, cook it until you get a thick, smooth sauce. Turn the heat off and keep it warm under cover.
  4. Oil & heat a griddle pan. Season the steak and fry for 3-5 minutes on each side to your liking.
  5. Transfer the steak to a plate, let it rest for 5 minutes, then slice it up.
  6. Reheat the sauce and pour over the steak before serving.
