Smoked salmon and avocado wrap

If you want to surprise your loved one in the morning with something yummy but super easy to make try this smoked salmon and avocado wrap. I made it with sweet potato ( gluten-free) tortilla wraps, but you can use corn or wheat ones, if preferred. Also, you can add a dollop of crème cheese too (perhaps mixed with some chopped chives), if dairy is not an issue. These wraps are ready in just 5 minutes - perfect for a special breakfast or brunch.

Ingredients
  

  • 2 tortilla wraps can be gluten-free
  • 2 slices of oak-smoked smoked salmon
  • 2 Tbsp crème cheese optional
  • 1 avocado
  • 1 handful of watercress or rocket leaves
  • Juice of half a lemon
  • Freshly ground pepper

Method
 

  1. Warm up the tortilla warp for a minute or so on both sides then slide them to a plate.
  2. Scatter some salad leaves on top (first spread some crème-cheese in the middle, if used) .
  3. Place a salmon slice on top, then squeeze some lemon juice all over the salmon.
  4. Generously grind some peppercorns on top, fold the tortilla into an envelope shape, (or roll it up, if preferred), then serve.
