Smoked salmon, edamame beans and avocado salad

This smoked salmon, edamame beans and avocado salad is very easy to put together, so it’s ideal for parties or for brunch on special occasions such as Boxing day, Anniversaries, Valentine’s day Mother’s day etc. Try to use good quality smoked salmon!

Ingredients
  

  • 50 g watercress or wild rocket leaves
  • 1 cup edamame beans
  • 4 slices of smoked salmon
  • 1 avocado
  • 1 lemon
  • For the dressing:
  • 1 tsp sesame oil
  • 1 Tbsp olive oil
  • 1 Tbsp Japanese vinegar
  • 1 Tbsp Kikkoman soy sauce
  • 1 tsp mirin
  • 2 tsp sesame seeds

Method
 

  1. Steam the beans over boiling water for 5 minutes, then rinse with cold water.
  2. Mix the dressing and pour half of it over the beans. Mix well and set aside.
  3. Shred the salmon into thin, long slices.
  4. Cut the avocado in half, remove the stone, then cut the flesh into slices or chunks. Immediately squeeze some lemon juice over them.
  5. Scatter the watercress onto a large plate. Add the beans, then arrange the avocado and salmon on top. Season with freshly ground pepper.
  6. Drizzle with the remaining dressing, then scatter the sesame seeds on top.
