Cut the ends off of the cucumber then cut it in half diagonally.
Using a vegetable peeler, peel long stripes on both or just one of the two pieces - from end to end to create a stripy effect.
Then cut both halves diagonally again into approx 3cm thick pieces.
Using an apple corer, cut out the middle, soft flesh of the cucumber.
Put the hollow cucumber pieces on a paper kitchen towel.
In a small bowl, mix the soft goat cheese with the chives or dill, some ground pepper, the lemon zest and some juice. Taste and adjust it to your liking.
Put approx. a teaspoon of the goat cheese mixture in the middle of each cucumber piece.
Tear or cut the smoked salmon into small strips and put them on top of the cheese, tucking them into the cucumber. Drizzle them with some lemon juice.
Garnish with dill or chives and ground pepper. Chill for at least 20 minutes before serving.
