Smoked salmon with avocado

This smoked salmon with avocado dish is ready in 10 minutes and requires no cooking. It’s perfect for Valentine’s fay, Mother’s Day, Anniversaries or a starter at a dinner party. If you don’t have food presentation rings, then you glass dessert bowls or parfait/ sundea glasses.

Ingredients
  

  • 1 avocado
  • 2 slices of oak smoked salmon
  • ½ tsp Dijon mustard
  • ½ lemon zested and juiced
  • 1 Tbsp chopped dill
  • Pepper
  • To serve: 1 handful rocket or watercress leaves
  • Olive oil

Method
 

  1. Chop the smoked salmon into tiny pieces, then mix with the mustard, lemon zest, dill and a squeeze of lemon juice. Season with freshly ground pepper.
  2. Peel then dice the avocado flesh into small cubes and drizzle with lemon juice. 
  3. Place two metal or silicon rings on a plate and add a layer of avocado first, pressing down slightly. 
  4. Divide the smoked salmon mixture between the two rings, then top with avocado.
  5. Rest in the fridge for 30 minutes or until you’re ready to serve.
  6. Carefully remove the food rings, then arrange some dill and rocket or watercress leaves on top.
  7. Drizzle with some olive oil and serve.
