Smoked trout and goat’s cheese salad

This Smoked trout and goat’s cheese salad makes a perfect starter at a dinner party - just served with some oatcakes or some fresh, wholesome rolls. Alternatively, serve it as a main course for a special lunch - particularly with a glass of bubbly! You can add some toasted walnuts or pine nuts if you like.

Ingredients
  

  • 2 large handfuls of mixed salad leaves
  • 2 smoked trout fillets
  • 2 spring onions
  • 50 g soft goat’s cheese
  • Juice of ½ lemon
  • Drizzle of olive or walnut oil
  • Freshly ground pepper

Method
 

  1. Scatter the salad leaves onto two plates.
  2. Tear the smoked trout into bite-sized pieces and arrange these on top of the salad leaves.
  3. Cut the spring onions into small slices, scatter these around the trout.
  4. Finally, just before serving, crumble the goat’s cheese all over the top, drizzle with oil & lemon juice then add plenty of freshly ground pepper.
