Spaghetti with garlic and oil

If you're short of time or have nothing in your fridge to cook - this recipe could come to your rescue. Spaghetti with garlic and oil is actually a traditional Italian pasta dish (spaghetti aglio e olio) which is made with the addition of chili flakes and parsley. It's extremely easy to throw together and it's surprisingly delicious. You can serve it with grated cheese if you like but, according to authentic recipes, cheese should not be added.

Ingredients
  

  • 200 g spaghetti
  • 4 Tbsp olive oil
  • 2 cloves of garlic crushed
  • 1 tsp crushed dried chilli
  • 1 handful of parsley leaves chopped
  • Grated Parmesan cheese optional

Method
 

  1. Cook the spaghetti according to the packaging instructions. Drain, but keep a drop of the cooking water.
  2. Heat the oil in a frying pan, add the crushed garlic and fry until light brown. Add the chilli pieces, fry for a few seconds, then add the pasta and warm through for a couple of minutes at low temperature, while stirring constantly. Add a drop of the cooking water to keep the pasta moist.
  3. Stir in the chopped parsley and serve immediately, sprinkled with grated Parmesan cheese and a squeeze of lemon juice if you like.
