Method
- Peel the onions, then slice them thinly. Peel & core the apples, then dice into 1 cm cubes. Chop the dried fruits.
- Wrap the star anise and cardamon in a piece of muslin, then tie it with some cotton thread.
- Put all ingredients (except the port) in a large, heavy-based pan. Bring to the boil, then cook for 90 minutes, over low heat and under cover.
- Stir in the port, then cook uncovered for another 60 minutes until you get a thick jam, stirring occasionally. It's ready when the fruits are surrounded by a thick, sticky syrup.
- Discard the spice-bag, then spoon the chutney into sterilized jars. When cooled, store the jars in a larder or fridge.
