Spiced new potatoes and spinach

If you need an easy recipe for a potato salad  hat goes well with grilled, barbecued or grilled meats try this Indian-style spiced new potatoes and spinach. You can pre-cook the potatoes and  finish off the recipe just 5 minutes before serving. It’s delicious, easy and healthy! Perfect for parties and family meals!

Ingredients
  

  • 400 g new potatoes
  • 2 cloves of garlic
  • 1 Tbsp vegetable oil
  • ½ tsp ground coriander
  • ½ tsp ground cumin
  • ¼ stp turmeric
  • ¼ tsp chilli powder or paprika
  • 100 g baby spinach
  • Juice of ½ lemon

Method
 

  1. Put the potatoes in a pan and cover with cold water, then bring the boil and cook for 15 minutes or until tender. Drain and rest until needed.
  2. Finely slice the garlic.
  3. Heat the oil a pan, add the garlic and cook for 30 seconds, then add the spices and stir for another 30 seconds. Add the potatoes and stir for a couple of minutes.
  4. Add the spinach and the lemon juice. Put a lid on and cook for 3-5 minutes until the spinach has wilted and the potatoes are warmed through.
  5. Season with salt and pepper.
  6. Serve with some dried chilli flakes, if you’d like it really spicy.
