Spiced raita

Raita is one of the basic dishes of Indian cuisine, which is normally served on the side of hot, spicey dishes as a cooling sauce. The basic raita recipe has just cucumber, yogurt, herbs and/or spices, but vegetables can be added to it too, such as spinach, onion, radish and so on. You can serve this spiced raita as a dip too (with poppadom), or as salad dressing, or pour it over grilled meat & roasted vegetables. For a vegan version, you can use plant-based yogurt - coconut or soy yogurt work best.

Ingredients
  

  • 1 cucumber
  • 1 cup of yogurt
  • 1 tsp mustard seeds
  • 1 tsp ground cumin seeds
  • ½ tsp grated fresh ginger
  • To serve: salt pepper, paprika, fresh coriander

Method
 

  1. Peel the cucumber and cut it into very mall pieces. Mix these with the yogurt.
  2. Dry- toast the mustard and cumin seeds in a pan for about a minute. Add these to the yogurt.
  3. Stir in the grated ginger, then season with salt and pepper to your liking.
  4. Garnish with a pinch of paprika, or some chopped fresh herbs.
