Ingredients

  • 1 small red cabbage
  • 1 red onion
  • ½ tsp crushed cloves about 4 cloves
  • 2 Tbsp light muscovado sugar
  • 1 cinnamon stick
  • 1 star anise
  • 1 bay leaf
  • 1 pinch of salt
  • ½ cup red wine vinegar
  • ½ cup cherry juice
  • 1 tin sherries in syrup
  • 3 Tbsp cherry brandy

Method

  1. Thinly slice the onion and finely shred the cabbage. Drain the cherries into a bowl and add the brandy. Set aside to marinate.
  2. Put everything in a heavy-based pan, including the tinned cherries syrup, then bring to the boil.
  3. Cook for about 30 minutes over low heat, until the cabbage is tender, or longer for a softer texture. Add the brandied cherries and simmer for 10 more minutes.
  4. Serve warm.
