Mix the ingredients for the brine In a large bowl then add the chicken wings. Make sure they are well covered. Cover the bowl with clingfilm and rest in the fridge to marinate for minimum 2 hours, preferably overnight.
Meanwhile, mix the rub and set aside.
Take the chicken out of the marinade and pat-dry them with kitchen towel. Rub them with the olive oil.
Pour the rub mixture into a freezer bag, then add the chicken, tie the handles and shake well until the wings are well coated with the spices. Put the bag in the fridge until you’re ready to cook.
Put all ingredients for the cola sauce in a pan, stir, then bring to the boil. Reduce the heat, and simmer until you get a thick, smooth sauce. Pour it into a small serving bowl and set aside (when cooled down, keep it in the fridge).
Preheat your grill or BBQ. Grill the chicken wings over medium heat until golden and charred. Be careful on the BBQ!
Serve with the cola sauce and side dishes of your choice.
