Spicy grilled pork steaks

These grilled spiced pork steaks are perfect for summer BBQs, year-round parties and midweek family suppers as it’s very easy to prepare; the marinating can be (and should be) done in advance; the grilling takes only a few minutes. Serve it with a fresh, minty youghurt sauce spooned on top and a crunchy green salad, or a new potato salad/mash.

Ingredients
  

  • 4 pork shoulder steaks
  • Salt & pepper
  • For the marinade:
  • 2 Tbsp olive oil
  • Juice and grated zest of 1 lemon
  • 1 tsp oregano
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • ¼ tsp cayenne pepper
  • 2 cloves of garlic minced

Method
 

  1. Using a tenderiser, flatten the meat 1 cm thickness. Put them in a shallow glass dish next to each other.
  2. Mix the other ingredients in a bowl and brush the pork on both sides. Pour over the remaining marinade. Chill for at least 2 hours.
  3. Heat your grill/bbq or griddle pan. Season the pork with salt & pepper and cook over medium heat for about 3-4 minutes on each side, brushing with the marinade a couple of times.
  4. When the steaks are charred and cooked through, transfer them to a plate. Rest for 5 minutes before serving.
