Spicy oven baked ribs

If you like the Tex-Mex style - slow-cooked, fall-off-the bone pork ribs - then do try this recipe. It takes a while but it's worth the wait! These spicy oven baked ribs are perfect for a party or a laid back family meal. Serve it with the usual Tex-Mex  side dishes, such as salad, chips and/or tortillas.

Ingredients
  

  • 1 kg pork ribs
  • 1 tsp paprika
  • 1 tsp chilli powder or cayenne powder
  • 3 Tbsp honey
  • 1 tsp dried oregano
  • ¼ teaspoon celery salt
  • 2 cloves of garlic minced, or ½ tsp garlic powder
  • 4 Tbsp dark muscovado sugar
  • 100 ml BBQ sauce
  • 1 onion grated
  • sea salt and ground pepper

Method
 

  1. If in one piece, cut the pork into individual ribs.
  2. Mix the rest of the ingredients in a bowl. Taste it - if it's not sweet enough, add more sugar, if not spicy enough, add more spices according to your taste.
  3. Rub the ribs with this glaze. If you have time, marinate it for few hours, even overnight - but 1 hour is OK.
  4. Set the oven to 170°C.
  5. Put the ribs in a baking tray and pour the marinade over them.
  6. Cover the tray with aluminum foil, put into the pre-warmed oven and bake for about 1.5 hours.
  7. It is ready when the meat is sticky and pulls off the bone easily.
