Spicy Roast Pork Leg

Ingredients
  

  • 1.5 kg pork roasting joint
  • For the spice rub:
  • ½ tsp chilli powder
  • 1 Tbsp paprika
  • 1 Tbsp ground cumin
  • 1 Tbsp Italian herb mix
  • For under the joint:
  • 250 g mushrooms sliced
  • 500 g new potatoes roughly chopped
  • 2 onions chopped
  • 4 garlic cloves chopped
  • 3 Tbsp olive oil
  • Freshly ground salt and pepper

Method
 

  1. Preheat the oven to 200°C
  2. Mix the rub elements well together and put into a large freezer bag. Pop in the pork and tie the top. Give a good shake and rub the mix all over the joint.
  3. Spread the mushrooms, potatoes, onion and garlic over the bottom of a medium-large roasting tin. Drizzle over the olive oil, season and coat all vegetables well.
  4. Put the joint onto the vegetables and tuck them around it.
  5. Roast for about two hours, basting and turning occasionally.
  6. Serve with seasonal green vegetables.
