Spicy turkey stir fry

This Spicy turkey stir fry is based on one I saw Ken Hom do on television years ago. It's really delicious - so quick & simple to do if you are familiar with using a wok - and, of course, a wok really is a must if you have any interest in developing your Chinese culinary skills.

Ingredients
  

  • 600 g turkey breast fillet
  • Tbsp groundnut oil
  • 1 Tbsp chopped ginger
  • 2 Tbsp chopped garlic
  • 3 Tbsp stock
  • 2 Tbsp sweet chilli sauce
  • 1 Tbsp soy sauce
  • 2 tsp sugar
  • To garnish: 1 Tbsp sesame oil
  • 1 handful basil or Thai basil leaves chopped

Method
 

  1. Cut the turkey breasts into thin (1cm) strips.
  2. Heat the wok and, when well heated, add the oil.
  3. When the oil smokes, put in the garlic and ginger.
  4. Stir-fry for half a minute then add the turkey strips and stir-fry for 2 minutes.
  5. Pour in the broth, then add the bean sauce (and sugar if used). Cook for 5 minutes.
  6. Finally add the sesame oil and the basil leaves.
  7. Serve hot.
