Spring onion guacamole

This spring onion guacamole is based on the classic recipes - instead of onion we use spring onion that taste a bit more mild and fresh. Adjust the heat to your liking, using hot chilli or Tabasco. Serve it with tortilla chops and crudites.

Ingredients
  

  • 2 ripe avocados
  • 1 small chilli
  • 4 spring onions
  • Juice of 1 lime
  • 1 handful fresh coriander or parsley
  • Salt & pepper
  • Optional: a few drops of Tabasco
  • 1 spring onion to garnish

Method
 

  1. Cut the avocados in half, remove the stone and scrape out the flesh into a small food processor.
  2. Roughly chop the tomato and the spring onion. De-seed the chilli. Put these into a small food processor together with the coriander, lime juice and avocado flesh.
  3. Whizz until you get a textured or smooth cream, according to your liking.
  4. Taste it. Season with salt and pepper and add more lime juice and Tabasco if needed.
  5. Serve immediately, garnished with chopped spring onion.
