Preheat the oven to 190°C.
Peel and dice the squash. Peal then cut the onion into 8 wedges. Deseed and slice the chilli if used.
Put the chopped vegetables in a baking try and add a spoonful of olive oil together with the rosemary. Mix well and bake for 20-25 minutes or until the squash is tender.
Meanwhile chop the bacon and the garlic. Heat a drop of oil in a frying pan and add the bacon and garlic. Cook until the bacon is crispy. Add the spinach or curly kale. Put a lid on, turn off the heat and rest.
When the squash is tender mix in the bacon mixture and cook in the oven for a further 5-8 minutes until the squash is golden.
Serve warm with wholesome, crusty bread and a green salad, if you like.
