Steak with salsa verde and tomatoes

If you want to serve a delicious but easy meal to your friends and family, you must try this recipe! This steak with salsa verde and tomatoes is a very simple dish to create - the sauce can be prepared in advance, cooking the steak takes only a few minutes. So it's ideal for parties, dinner parties and laid-back meals. Serve it with a simple mash (for example sweet potatoes) or just crusty bread.

Ingredients
  

  • 2 thick matured sirloin steaks
  • 2 cloves garlic pressed
  • 1 tsp capers
  • Grated zest and juice of ½ lemon
  • 1 small bunch of mint
  • 1 small bunch parsley
  • 1 small bunch basil
  • 2 slices of anchovies in oil, drained
  • 1 tsp dried chilli flakes
  • 4-5 Tbsp olive oil
  • 200 g cherry tomatoes

Method
 

  1. Put the garlic, herbs, capers, lemon zest, herbs, anchovies and chilli flakes into a food processor and blend to a coarse paste. Add the lemon juice, then gradually pour in the oil, while pulsing the blender on a low setting.
  2. When you get a textured paste, taste it and season with salt and pepper to your liking.
  3. Cut the tomatoes in half, put them a bowl and pour over the salsa verde. Set aside.
  4. Heat your grill, BBQ or griddle pan. Rub the steak with some oil and season with salt.
  5. Seal the steak on each side for 30 seconds, then cook it to your liking - turning the meat over every minute or so.
  6. Move the steak to a plate, cover and rest for 5 minutes. Serve with salsa verde and tomatoes.
