Stir-fried mangetout and edamame beans

This stir-fried mangetout and edamame beans is a super easy dish to make - it would be ideal as part of a Japanese or even South-East Asian menu. Also, you can serve it as part of a vegan meal with rice.

Ingredients
  

  • 1 clove of garlic
  • 2 cm piece ginger
  • 1 chilli
  • 100 g mangetout
  • 100 g edamame
  • 1 Tbsp soya sauce
  • 1 Tbsp rice wine
  • Juice of ½ lime
  • ½ tsp sesame oil
  • Sesame seeds
  • 2 Tbsp chopped coriander

Method
 

  1. Finely chop the garlic, ginger and chilli.
  2. Heat the oil in a wok, then stir-fry them for 30 seconds or so.
  3. Add the mangetout and beans, then stir-fry for a minute. Add the soya sauce, rice wine and lime juice. Turn down the heat and cook for about 3 minutes until tender.
  4. Stir in the sesame oil, coriander leaves and sesame seeds, then serve immediately.
