Dry the tofu and cut it into 2cm cubes.
Peel and thinly slice the onion, ginger and garlic.
Heat half of the oil in a wok. When it’s smokey, add the tofu and stir-fry for a couple of minutes, until light brown an all sides. Transfer them to a plate, lined with paper kitchen towels.
Wipe out the wok and heat the rest of the oil. When it’s smokey, add the the onion & ginger and stir-fry for 3 minutes.
Add the garlic, stir for a minute, then add the mangetout.
Add the soy sauce, rice wine and sesame seeds. Stir-fry for a couple of minutes, then add the sesame oil and tofu cubes. Combine gently and serve hot, while it’s sizzling (with some slice chilli scattered on top, if liked).
