Sweet chilli meatballs

These South-Asian style sweet-chilli meatballs are perfect on those days when you don't have much time to cook.  It takes 5 minutes to prepare (which can be done in advance and kept chilled) and 10 minutes to grill. Serve with noodles and stir-fried veggies.

Ingredients
  

  • 2 shallot onions chopped
  • 2 garlic cloves
  • 2 sticks lemongrass
  • 1 handful mint leaves
  • 1 handful of coriander leaves
  • 1 tsp cornstarch or cornflour
  • 500 g of minced pork lean
  • 3 Tbsp Thai fish sauce
  • 2 Tbsp sweet chilli sauce

Method
 

  1. Cut the ends off the lemongrass, remove the outer layer, then roughly chop.
  2. Put the shallots, garlic, lemongrass & fish sauce in a food processor and blend until they're finely chopped. Add the mint, coriander and cornstarch. Blend for several seconds, then add the mince. Season with salt and pepper and blend for a few seconds until well combined.
  3. Shape 18-20 little balls from the mixture. Place these on a baking tray lined with baking paper, then grill for 3-5 minutes on each side.
  4. Brush each ball with some chilli sauce and grill for a couple of minutes until lightly caramelized Serve with sweet chilli sauce.
