Sweet potato and black bean burger

I love baking sweet potatoes at the weekend so that I can make quick meals from them during the following week. These vegan sweet potato and black bean burgers is one of the recipes I make often because it’s so easy and the result is super healthy and yummy at the same time. Occasionally I add chipotle paste to the mixture (instead of chilli powder) which gives it a smoky taste. I normally serve it with a crispy salad or spiced salsa in wholesome flatbread – but you can serve it in a burger bun with the usual condiments.

Ingredients
  

  • 2 sweet potatoes
  • 1 tin black beans drained
  • 1 red onion
  • 1 garlic clove
  • 1 tsp dried oregano
  • ½ tsp cayenne pepper or chilli powder
  • 1 tsp ground cumin
  • ½ cup brown rice flour
  • ½ cup tinned sweet corn drained
  • 2 Tbsp chopped coriander or parsley.
  • Salt and pepper
  • Olive oil to cook

Method
 

  1. Put the sweet potatoes in a baking tray and bake until you can easily push a skewer through it. Let it cool then scoop out the flesh. This can be done days ahead - just keep the flesh chilled.
  2. Finely chop the onion and mince the garlic.
  3. Heat a spoonful of oil in a pan and gently sauté the onion until soft and slightly caramelised. Add the garlic and herbs, then stir for a minute or so, until fragrant. Let it cool.
  4. Mash the beans in a large bowl until you get a textured mash. Add the sweet potato flesh, the onion mixture and rice flour. Combine well.
  5. Add the corn and chopped herbs of your choice, mix well again, then form 6-8 balls. Flatten them between your palms, then put them on a plate and chill for 30 minutes or until you’re ready to cook.
  6. Heat some oil in pan or turn your grill on. Put some rice flour in a bowl and coat the patties, then fry them in the hot oil 2-3 minutes on both sides until golden. If grilling, spray them with some oil and put them on a baking sheet or directly on a rack. Grill for 3-5 minutes on each side.
  7. Serve warm in a bun or flat bread with side dishes and condiments of your choice.
