Tahini sauce

The other day I was in a trendy food store and almost bought a jar of tahini sauce. I checked the ingredients, then looked at a few recipes online and realised that it can be home-made very easily at a fraction of the price. This vegan, super-healthy sauce is perfect for falafels, salads, kebabs, burgers and so on -  and it keeps well in the fridge for two weeks (in an airtight jar). If you like, you can spice it up a bit with chilli flakes, Harissa paste or a pinch of paprika/cayenne.

Ingredients
  

  • 4 Tbsp tahini paste
  • juice of 1 lemon
  • Salt
  • ¼ tsp garlic powder or 1 garlic clove minced (optional)
  • 4 Tbsp warm water or chickpea cooking water approx..
  • chopped parsley to garnish (optional)

Method
 

  1. In a small bowl whisk the tahini paste, salt, lemon juice and garlic (if used), adding a drop of water at a time until you have a creamy, pourable sauce.
  2. Taste it and adjust the seasonings/acidity to your liking.
  3. Keep it chilled until serving.
  4. Serve with chopped parsley scattered on top (optional).
