Preheat the oven to 190°C.
Cut the lemon into 1cm rings.
Cut the garlic into 4 slices.
Cut slits in the chicken meat (underneath) and push the garlic pieces into the insertions.
Loosen the skin and tuck 1 lemon ring and 1 stalk of tarragon underneath. Season with salt and pepper, and place them in a baking tray, on top of the remaining lemon rings. Drizzle with some oil and season with salt and pepper.
Bake for 35-40 minutes until the skin is golden and crispy.
Serve with the jus poured over the chicken or the sides dishes.
