Cut the tenderloin fillet into 1 cm thick medallions. Put them in a dish.
Mix the BBQ sauce, tomato sauce, rice vinegar, lime juice, grated ginger & garlic. Taste and add some honey if you think it’s too sour.
Pour the mixture over the medallions and marinate for a couple of hours or even overnight.
Preheat the oven to 180°C.
Thinly slice the chilli and spring onions.
Put the medallions in a baking dish, pour over the marinade, then season with black salt and pepper.
Bake for 20- 25 minutes. After 15 minutes, turn over the medallions and scatter the spring onion and chilli slices over them.
Serve with chopped coriander scattered on top.
