Ingredients

  • 250 g mascarpone
  • 300 ml double cream
  • 3 Tbsp muscovado sugar
  • 1 tsp vanilla extract
  • 2 Tbsp Amaretti
  • 200 ml strong coffee
  • 2 pack of sponge fingers
  • Dark chocolate
  • Cocoa powder
  • Matchmakers chocolate sticks orange or mint
  • Snake shaped gums or sweets

Method

  1. Make the coffee and let it cool.
  2. Whisk the double cream, sugar and vanilla in a large bowl until creamy and fluffy. Add the mascarpone and whisk again for a few seconds. You should get a thick, but airy cream.
  3. Pour the coffee into a shallow dish, then dip the sponge fingers in it, one at a time, turning them for a few seconds. They should not become soggy!
  4. Layer these in two small or one large glass dish. Spread evenly half of the creamy mixture on top.
  5. Repeat the sponge fingers and cream layering. Cover the dish, then refrigerate for a couple of hours.
  6. When you’re ready to serve, snap a couple of sponge fingers in half. Write RIP on them or draw a cross with icing pen. Set aside - these will be the gravestones.
  7. Dust the tiramisu with cocoa powder.
  8. Snap the Matchmake sticks into different sizes and push these into the dish, around the tiramisu to create a fence.
  9. Push the decorated “gravestones” into the tiramisu, then push a couple snakes sweets into the cocoa topping.
  10. Make some dark chocolate into rough crumbles. Scatter these at around the snakes and gravestones to create a soil effect.
  11. Serve and enjoy!
