Tortilla with grilled asparagus and feta

For a light lunch or brunch, you should try this Tortilla with grilled asparagus and feta - grilled asparagus is one of my favourites, particularly combined with egg. This time I had to use up some (gluten-free) tortilla wraps and some vegan "feta", so I’ve decided to make this zingy dish. You can add some salad leaves if you like. Obviously, wheat/corn tortilla and proper feta cheese would work too!

Ingredients
  

  • 4 Tortilla wraps
  • 1 bunch asparagus
  • Garlic oil spray
  • 50 g feta or vegan feta
  • 1 lemon zested and juiced
  • Chives or dill

Method
 

  1. Snap off the woody ends of the asparagus.
  2. Heat a heavy-based griddle pan and put the asparagus on top. Spray with the oil and squeeze some lemon juice on top. Grill for about 5 minutes, turning them over regularly.
  3. Meanwhile, crumble the feta in a small bowl, spray with some oil, add the herbs of your choice, lemon zest & juice. Toss, then rest.
  4. Heat a pancake pan and toast the tortilla wraps for a minute on each side, then move them to a plate.
  5. Add a few asparagus to each, then scatter some feta mixture on top, season with salat & pepper, roll up and serve.
