Tuna with Ginger and Honey Stir Fry

Marinating for just 30 minutes gives fresh tuna a real depth of flavour. I was going to do a more sophisticated recipe but the two beautiful tuna steaks broke up cycling back from the shop. It resulted in this very easy but delicious stir fry which is nice with pasta or noodles and fresh veg or salad.

Ingredients
  

  • 2 tuna steaks - about 350
  • Marinade: 2½ cm fresh ginger peeled & grated
  • 1 or 2 cloves finely chopped garlic
  • 1 Tbsp honey
  • 1 Tbsp groundnut oil
  • 1 Tbsp soy sauce
  • For cooking1 Tbsp groundnut oil
  • 1 tsp sesame oil

Method
 

  1. Stir together the marinade ingredients in a mixing bowl
  2. Break the tuna into biggish chunks and drop into the bowl
  3. Coat the fish well with the sauce then put in the fridge for 2½ hour or so
  4. Heat wok (or large frying pan) well and add the extra groundnut oil
  5. Remove the tuna from the marinade and add to the pan
  6. Stir fry for a couple of minutes, add the sesame oil and serve
