Turkey breast in creamy mushroom sauce

This French-style turkey breast in creamy mushroom sauce is super easy meal, perfect for midweek suppers or lazy weekend meals. Serve it with rice, boiled or mashed potatoes and a crispy salad on the side.

Ingredients
  

  • 1 turkey breast fillet
  • 1 onion
  • ½ red or yellow bell pepper
  • 2 sprigs of thyme leaves only
  • 100 g chestnut button mushroom
  • 100 ml single cream
  • 1 bay leaf
  • 1 Tbsp Dijon mustard
  • dash of lemon juice

Method
 

  1. Cut the turkey into bite-sized chunks or stripes.
  2. Finely chop the onion and bell pepper.
  3. Heat a little oil in a heavy-based pan, then gently sauté the onion and bell pepper for about 5 minutes. When softened, add the turkey and thyme leaves. Season with salt and pepper and stir until the meat has changed colour.
  4. Add the mushrooms and a drop water or lemon juice. Put a lid on and sauté for about 10 minutes until the mushrooms have released their liquid.
  5. Add the bay leaf, mustard and cream.
  6. Cook for about 5 minutes, stirring, until you a get a thick, silky sauce.
  7. Taste and adjust the seasoning to your liking - you might want to add a drop of lemon juice to it.
  8. Discard the bay leaf and serve warm.
