Turkey breast stir-fry

I found some water chestnuts in the back of the cupboard that I'd forgotten about. They reminded me of a turkey breast stir-fry that I'd made some years ago and had also forgotten about. I'm glad I resurrected it because it's very quick & easy but subtly delicious.

Ingredients
  

  • 400 gm turkey breast cut into thin strips
  • 1 tsp groundnut oil
  • 4 garlic cloves finely chopped
  • ¼ tsp paprika or chilli pepper
  • Tbsp gram chickpea flour
  • ¼ teaspoon salt
  • 225 ml chicken stock
  • 1 tsp sesame oil
  • 200 g fresh broccoli
  • 1 red capsicum bell pepper cut into thin strips
  • 1 small can water chestnuts drained
  • 2 Tbsp soy sauce

Method
 

  1. Heat the groundnut oil in a hot wok until it smokes then add the turkey strips.
  2. Stir fry thoroughly for about 5 minutes then remove to a bowl.
  3. Mix together the garlic, gram flour, paprika, salt and stock in a mixing bowl.
  4. Reheat the wok, add the sesame oil and when smoking stir-fry the capsicum & broccoli for a couple of minutes. Add the water chestnuts, fry for another minute then add the stock mixture. Bring to the boil and allow to thicken.
  5. Add the turkey strips and soy sauce, warm through for a couple of minutes.
  6. Serve with rice or part of a menu.
