Turkey burger with oats

These turkey burgers are made with oats and carrots so are perfect for those who need to eat more fiber and vegetables. The oats actually help the patties to bind.

Ingredients
  

  • 2 Tbsp olive oil
  • 2 cloves of garlic minced
  • 1 large onion finely chopped
  • 50 g porridge oats
  • 500 g minced turkey meat
  • 100 g dried apricots finely chopped
  • 1 medium carrot grated
  • 1 egg
  • To serve: bread rolls pickled cucumber, pickled beets, mayonnaise, tomato, lettuce, chutney etc.

Method
 

  1. Heat the oil and fry the onion for 5 minutes, or until soft. Add the garlic, stir for a few seconds then add the oats. Fry for 2-3 minutes, then leave to cool.
  2. In a large bowl combine the meat, eggs and the onion&oat mixture. Add the carrot and the apricot. Season to taste, mix well.
  3. Form 8 patties. Rest for 5 minutes (or chill until needed).
  4. Heat a frying pan or griddle pan. Oil the patties on both sides then fry them on both sides until cooked through.
  5. Serve in rolls with toppings and fillings of your choice.
