Cut the turkey into long thin strips and put them in a bowl. Add the other ingredients, mix well and marinate for up to 2 hours.
Meanwhile prepare the vegetables. Cut the carrot and red pepper into long strips. Thinly slice the onion, garlic and ginger. Cut the corn into 1 cm pieces. Chop the spring onions.
Heat the groundnut oil in a hot wok until it smokes, then add the turkey strips and the marinade. Stir-fry thoroughly for about 5 minutes, then remove them to a bowl.
Add more oil if needed, then add the onion, carrot, pepper, ginger and corn. Stir-fry for 3-5 minutes, then add the garlic, and stir for another minute. Add the soy sauce and rice wine, stir, then add the green beans.
Turn down the heat and cook for 2-3 minutes, then return the turkey strips, add the sesame oil & spring onions, then warm through.
Scatter the sesame seeds on top just before serving.
