Vanilla porridge with honey and cinnamon apple

Sometimes I have my daily porridge as a pudding after lunch. On these occasions I create a quick fruit puree or compote to make a lovely and healthy dessert. This vanilla porridge with honey and cinnamon apples is really yummy -  I made it with Alpro vanilla yogurt and oat milk so it’s vegan, but you can use normal yogurt and milk for a non-vegan version.

Ingredients
  

  • 50 g rolled porridge oats gluten-free, if needed
  • 1 tsp cinnamon
  • 350 ml fresh milk or oat milk
  • Vanilla yoghurt vegan, if needed
  • For the apple compote:
  • 2 green apples
  • ½ tsp cinnamon powder
  • 2 Tbsp honey
  • 1 handful hazelnuts

Method
 

  1. Put the porridge oats in a saucepan and mix in the cinnamon. Add the milk, then turn on the heat.
  2. Simmer over low heat for 10 minutes. Add a little more milk, if needed. Turn off the heat, give it a stir, then put a lid on and rest for 5 minutes.
  3. Meanwhile, peel & core the apples, then cut them into chunky slices.
  4. Put them in a non-stick pan, add the honey and cinnamon. Caramelize them for about 5-8 minutes, stirring occasionally. They should be tender, not too soft. Stir in the nuts, coat them with the honey, then turn off the heat.
  5. Spoon the porridge into two bowls, then mix in some vanilla yogurt. Top with the glazed apple & nuts. Drizzle over the syrup from the pan and more honey to your liking.
  6. Serve warm or at room temperature.
