Vegan almond and apricot oat cookies

These vegan almond and apricot oat cookies are actually quite healthy as they don’t have any added sugar or fat - yet they are sweet and moist thanks to the bananas and almonds. They are perfect for snacking during the day or for breakfast with your morning coffee.

Ingredients
  

  • 2 ripe bananas
  • 1 apple grated
  • 1 cup porridge oats gluten-free, if needed
  • ½ cup ground almond
  • ½ tsp vanilla extract
  • 1 tsp cinnamon powder
  • 50 g dried apricots

Method
 

  1. Puree the bananas in a food processor or using a fork.
  2. Add the oats, grated apple, cinnamon, almond and vanilla. Mix well and let it rest for 10 minutes.
  3. Meanwhile, set the oven temperature to 180° C. Line a baking tray with parchment paper.
  4. Finely chop the apricots then add to the mixture and combine well.
  5. Form six or eight balls from the mixture, then flatten them slightly between your palms. Put the patties on the baking tray and bake in the oven for about 15-20 minutes until golden.
  6. Transfer the cookies to a rack and let them cool.
  7. Keep them in an airtight jar.
