Vegan almond scones

These dairy-free, vegan almond scones are perfect for afternoon tea. If dairy is not an issue for you,  you can use butter and normal milk. Serve it with jam and clotted cream ( for the dairy version).

Ingredients
  

  • 200 g self-raising flour
  • 50 g ground almonds
  • Pinch of salt
  • 50 g dairy-free spread in chunks
  • 2 Tbsp light brown caster sugar
  • 150 ml almond milk
  • Handful of almond flakes optional

Method
 

  1. Pre-heat the oven to 180°C and line a tray with baking paper.
  2. Put the flour, almond, salt and spread into a bowl and rub with your fingers until it resembles breadcrumbs.
  3. Mix in the sugar. Add the milk and mix with a palette knife until you have a dough.
  4. Transfer the dough to a lightly floured work surface and cut out cookies, using a scone cutter.
  5. Alternatively, make patties from the dough for a rustic version. Put the scones onto the lined baking tray.
  6. You can glaze them with some almond milk or scatter almond flakes on top of them.
  7. Bake for 10-15 minutes until golden, then transfer them to a wire-rack to cool.
  8. Serve warm or at room temperature.
