Vegan apple, blueberry and almond crumble

Crumble is one of the desserts that can easily made vegan and gluten-free. This vegan apple, blueberry and almond crumble is baked with dairy-free spread and gluten-free oats. I served it with Alpro blueberry yoghurt, but any plant-based custard or vanilla ice-cream would go well with it too.

Ingredients
  

  • 2 green apples
  • 100 g blueberries
  • Lemon juice
  • 2 Tbsp unrefined muscovado sugar
  • 1 tsp cinnamon
  • 1 cup rolled oats gluten-free
  • ½ cup ground almond
  • 50 g dairy-free soft margarine or spread approx..

Method
 

  1. Preheat the oven to 180°C.
  2. Peel and core the apples, then chop them into small pieces. Scatter them into 4 ramekins or in one oven-proof dish. Squeeze a drop of lemon juice on top, then add the blueberries (divided equally). Dust each with one teaspoon of sugar (or 2 Tbsp if you’re using one dish).
  3. In a bowl, rub the margarine/spread with the oats, cinnamon and ground almond until you get lumpy, sticky crumble, then add the remaining sugar and combine. Add more margarine if it’s too dry.
  4. Cover the apple & blueberry with the crumble, slightly pressing it down with a spoon. You can garnish it with some almonds, if you like.
  5. Bake for about 20 minutes until golden and crispy.
  6. Serve warm.
