Ingredients
  

  • 2 large ripe bananas
  • cup oil
  • ½ cup oat or hazelnut milk
  • 1 tsp vanilla extract
  • 2 cup spelt flour
  • 1 cup flour
  • 2 tsp baking powder
  • 1 tsp cinnamon powder
  • 200 g vacuum packed or roasted and peeled chestnuts
  • ½ cup muscovado sugar
  • Icing sugar or 1 banana to serve

Method
 

  1. Put the chestnuts into a blender and process until you get crumbs. Transfer this into a mixing bowl.
  2. Puree the bananas in the blender, add the oil and vanilla. Pulse for a few seconds, then spoon this mixture into the mixing bowl. Add the other ingredients and mix well until sticky and dough-like.
  3. Line a bread tin with baking paper and spoon in the mixture. Bake in the middle of the oven for about 45-55 minutes until golden on the outside and an inserted skewer comes out clean.
  4. Cool on a wire rack, then decorate with sliced bananas, dipped in icing, or dust with icing sugar.
